Tree Oyster mushrooms, also known as the pearl oyster mushroom, grow naturally on trees anywhere in temperate and subtropic forests around the world. In Japanese, Korean, Chinese, Czech, and Slovak cuisine, this mushroom like other oyster mushrooms is considered a delicacy.

Frequently served as a cooked stand-alone dish, Tree Oyster mushrooms can also be found in soups, stews, stuffed, in stir-fry recipes with a soy sauce base. Also commonly used in sauces. The flavor is mild with a slight aroma of anise and can act as a great meat substitute. Best picked young while the flesh is tender.

They are extremely perishable and are recommended to be used immediately for optimum flavor and quality. They can also be stored in a paper bag in the refrigerator for a very short time and can be frozen for up to 3 months once cooked. Another option for storing these mushrooms, they dehydrate well, and once dried, and stored in a sealed container away from sunlight they can be kept for longer and don’t need to be dehydrated for some cooking applications.

Tree Oyster mushrooms contain naturally occurring Statins which have been known to reduce “bad cholesterol”. They also contain vitamins B6 and D, fiber, potassium, and folate. They also contain an antioxidant called ergothioneine, which can help decrease inflammation in the body.
