These brightly colored yellow mushrooms are native to Asia, where they were considered wild and elusive species specially harvested for culinary use. The Yellow Oyster mushroom also known as the Golden Oyster mushroom has a light and fresh scent and has been nick-named the Dashi mushroom as they are widely known for adding an umami flavor to broths and stocks.
When cooked, these mushrooms are tender and release a fruity aroma that is reminiscent of red wine. They have a mild, nutty, and earthy taste with nuances of citrus, cinnamon, and just a little bit of sweetness to balance the flavors out. Popularly used in stir-fries, sauteed with butter, and simmered in sauces, they can be served with braised meats, rice, and noodle dishes, caramelized and served with breakfast frittatas, on toast, or added to pizza as a delicious topping.
These mushrooms don’t last long refrigerated, and cannot withstand excessive handling, so it’s better to cook and eat them as soon as you get home! They can be refrigerated in a paper bag with paper towels placed between the mushrooms for a few days and can be dehydrated and stored in a sealed container away from sunlight or cooked and frozen in a freezer for up to 3 months. They can be used as a meat substitute and pair well with meats like poultry, steak, pork, and seafood. Shines with herbs like cilantro, thyme, parsley, rosemary, and tarragon. Make sure to include aromatics like garlic, onion, leeks, asparagus, bok choy, potatoes, citrus, and coconut milk.
